Mint Creme Oreo

I LOVE Mint Creme Oreos, and have a very hard time when my husband snacks on them. I created this to help myself through the temptations. The fudge portion is very good on its own as well. This is a very rich dessert without all of the guilt.

Ingredients:
Fudge-
8 oz Cream Cheese - Fat Free or Neufchatel
15 oz Ricotta Cheese - Low Fat
6 TBSP Stevia, or to taste
1/2 Cup Dark Cocoa Powder

Mint Creme-
8 oz Cream Cheese - Fat Free or Neufchatel
1 tsp Peppermint Extract
1/2 tsp Vanilla Extract
5 TBSP Stevia, or to taste
Green food coloring if desired

Instructions are straight forward. Combine all of the fudge ingredients in a bowl, and all the mint ingredients in a separate bowl. I used a food scoop to place one layer of fudge, a layer of mint, and a final layer of fudge in a 4 oz jar. The jars can be purchased here, and the lids here.

  1. Hi Jen, I am on my second day on the attack phase and am wondering if this recipe is attack friendly? If so, do you know if there are any restrictions of how much I can eat, ie. only a couple teaspoons a day. I am going to make the fudge only, does this need to be baked or is it done once you've mixed the ingredients? Thanks so much for posting this on your blog! Beth

      Thanks for stopping by. Congratulations on starting Dukan, I hope it works great for you.

      This is one of the desserts that cannot be eaten in the attack phase due to the cocoa powder. However you can start to eat it once you move onto the cruise phase. Soon, very soon.

      The Dukan website suggests only consuming 1 to 2 teaspoons per day, this recipe has 1/2 cup which is spread out over many servings. Each serving meets the suggestion. You will find that this is a very rich dessert and you may have a hard time finishing one serving some days, other days I could gobble down more.

      This does not have to be cooked in any way, and mixes up quite fast. Just make sure you don't add the cocoa powder in all at once, it makes a mess. If you want something that is creamier try adding some milk until it reaches your desired consistency. If dark chocolate is too much you may want to try other cocoa powders.

      If you are craving something sweet that is appropriate for the attack phase I would highly suggest some cream cheese mixtures, such as the lemon cream cheese (http://jentested-dukanapproved.blogspot.com/2012/01/lemon-cream-cheese.html) or my personal favorite plain cream cheese with a cinnamon Truvia blend (like cinnamon sugar)sprinkled on top. The cinnamon helps burn fat and is a great option to add great flavor.

      Another idea is to heat your oat bran and eat it like oatmeal, again with some Truvia and cinnamon. This can shake things up a bit and give you a sense of something satisfying. I have also added nutmeg, allspice, vanilla, cloves and a bit of ginger to make it taste similar to an oatmeal cookie.
